About Emily
Emily A. Callahan founded EAC Health and Nutrition, LLC in 2015 to help organizations evaluate and communicate research to educate stakeholders, shape environments, and advance policies to promote healthy eating, active living, and population health.
Emily’s strengths are in research evaluation and translation, strategic analysis of data, scientific and technical writing and editing, and content creation for consumer, health professional, academic, and policymaker audiences.
Previously, Emily worked at the American Heart Association as program lead of a national nutrition initiative to improve the healthfulness of the food supply and Americans’ diets, and at the National Academies of Sciences, Engineering, and Medicine as a program officer supporting expert committees that produced consensus studies and thought leader workshops. She has also counseled adult patients in nutrition, delivered numerous in-person and web-based presentations to professional and consumer audiences, and undertaken public health and nutrition activities in Japan and Ethiopia.
Emily earned an MPH in Nutrition and a certificate in Interdisciplinary Health Communication from the Gillings School of Global Public Health at the University of North Carolina at Chapel Hill, where she was recognized with a Distinguished Alumni Award in 2015. She earned a BS in Dietetics, summa cum laude, from Miami University in Ohio. Emily has been credentialed as a Registered Dietitian Nutritionist since 2008 and is a member of the Academy of Nutrition and Dietetics and the American Public Health Association.
Emily resides in the Washington, DC metro area with her family and works with clients across the country.
